WINES

Pilot-Sévillano is in the hands of Christine Sévillano, who is the 10th generation to make wine on this family domaine. Located in Vincelles, in the Marne Valley, Christine has been running the estate since 2007 and in 2011 they implemented new agricultural techniques in order to preserve their soils and biodiversity.

Meunier is the speciality of the house and is grown without the use of pesticides or herbicides with groundwork being done by hand and horse. Across the three cuvée shown above, Meunier is dominant and brings a wonderful savoury, animal character and ripens the fruit of these delicious Champagnes.

"Essence de Terroir" is a blend of 70% Meunier, 15% Pinot Noir and 15% Chardonnay and spends 36 months on fine lies before disgorging. This round, ripe-fruited Champagne is the expression of the house and generations of experience.

Red wine made from Meunier that comes from the oldest parcelles of vines makes up 15% of the blend in the "Âme de la Rive Droite" Rosé. Total blend is formed of 60% Meunier, 25% Pinot Noir and 15% Chardonnay. It's a bright, spiced, red fruit bomb that explodes on the palate.

The third Champagne is made up entirely of a perpetual reserve of Meunier that was started in 2011. A third of the tank (just 640 bottles) is bled off each year and the tank is subsequently topped back up with Meunier from the most recent vintage. This gourmet cuvée reveals violet, rose, maple and vanilla with aromas of melting pear with a nice, persistent and silky finish.
